The cookie of summer
A little lavender lemon number for you.....but first a short lavender syrup detour
Some would question a summer cookie recipe, like isn’t it all about ice cream and snow cones in the summer? Well, yes and no. Of course I am no stranger to eating a lot of ice creams (my favorite shop is Kinrose here in Pasadena…and if you go ask for extra fairy floss….trust me on this), and when available a lot of snow cones! But cookies work all year long, especially simple but really classic ones.
And this cookie….kind of made it by accident honestly. Nina and I were doing lavender syrup (which is also delicious by the way). You can go all kinds of ways with the syrup but the below was kind of what we were going for. I could not help but include as a little lead in to the cookie. Here’s the recipe and I promise the cookie recipe follows….I promise! It's a Iced Lavender Cream Oatmilk Matcha Latte (Starbucks copycat). I mean, Lavender cream? Who knew something that pillowy and gorgeous even existed in a beverage?
Ok, now that you are all warmed up and ready for the main recipe let’s get into it! The lemon lavender sable cookies were the ones that really caught my eye on Casual Foodist once I dove into the site. And there was no shortage of beautiful amazing recipes.
The cookies themselves are really, really good but then you have the lemon glaze and THEN you top that with the lavender….I mean, c’mon! I was in the mood for an easy peasy dessert since I made this for a little 17th birthday celebration last night…it wasn’t that hard but there were the details that all good pies require, and it didn’t help that I forgot to buy the sweetened condensed milk in the store. I will say a key like pie makes an excellent birthday pie.
Anyway, I digress…..the cookies. These come together quickly so you can easily squeeze it into the fringes of a busy summer day. Maybe take them to a neighbor that just moved in like I plan on doing. You can also just eat them all yourselves, I wouldn’t judge and may have done the same thing well, a few times!
For the cookies
1 cup unsalted butter room temperature
1/2 cup sugar
1 large egg
1/4 cup honey
1 tsp vanilla extract
2 1/4 cups All purpose flour
1 tbsp lemon zest about 1 lemon
2 tsp dried lavender , plus extra for topping the cookies
1/2 tsp kosher salt
For the glaze
1 cup confectioners sugar
2 tbsp lemon juice
Instructions
Using an electric mixture cream together butter and sugar on medium speed until smooth. Add in honey, egg and vanilla and beat until smooth. Add flour, salt, lemon zest and lavender and mix on low speed until combined.
Divide dough in half and form into two 9 inch logs. Wrap each log tightly in parchment paper and then roll the entire log to make it as round as possible. Chill until firm (at least 2 hours).
Preheat the oven to 350 degrees. Cut the cookies into 1/2 inch slices and place on a baking sheet lined with parchment paper or a silicon baking mat.
Bake for 10-12 minutes until cookies are just golden on the edges. Cool for 5 minutes on the baking sheet, transfer to a baking rack and fully cool.
Combine powdered sugar and lemon juice until smooth. Drizzle the glaze over each cookie and sprinkle with lavender buds.
